Dried Bisbas, or Bisbas Mat-houn is a hot spice mixture with garlic, salt, chili peppers and other spices. It can be eaten with bread, lahooh or yogurt, or used as a condiment on sandwiches. It is really spicy, just a little bit goes a long way!
1 tbsp. cumin
1 tbsp. coriander
1/2 tbsp. black peppercorns
6-8 dried red chilis, depending on your taste
4 cloves garlic, peeled and minced
2 1/2 tsp. salt
2 tbsp. sesame seeds
2 1/2 tsp. turmeric.
Blend all ingredients in a spice grinder or blender until finely chopped. A spice grinder is easier to use for this recipe, but a regular blender also works.Break any lumps and toast in 300 degree oven for 15-20 minutes. This will help any mositure from the garlic to evaporate. Place back in blender until superfine
